Youth fitness continues to fall. According to the latest research from the national center for health statistics, the number of teenagers aged 12-15 years with adequate fitness continues to decline. Here's a challenge. Either individually or with family or friends, add 15-30 minutes of activity to your daily routine each day. Try to make it an activity that is fun for you and at the same time easy to do. Invite your friends to join you at the park or playground for a game of kickball or dodge ball. You might try a game of jump rope.

Watermelon Gazpacho

Ingredients:
6 cups of chopped watermelon
1 clove of garlic
1/2oz red onion (approximately 1/4 small)
3oz cucumber (you can peel and remove the seeds, but I prefer to leave both)
1/4 chopped red bell pepper
1-2 tablespoons lime juice
1/4 cups extra virgin olive oil
Sea salt to taste
Large mint leaves for garnish

Makes about 6 servings

Steps:
Put the watermelon, garlic, red onion, cucumber, red bell pepper and lime juice in a blender. Puree until smooth. Slowly drizzle in the olive oil.
